Lemon Poppy Seed Scones

3/4 cup earth balance butter, softened
1 lemon, juice and zest
1 1/2 tablespoons poppy seeds
2 cups all-purpose flour
3/4 cup white sugar
4 teaspoons baking powder
1/2 teaspoon salt

Preheat the oven to 400 degrees F. Mix flour, sugar, baking powder and salt into the softened butter until completely blended. Stir in lemon juice, zest, and poppy seeds. Use two greased cookie sheets with 6 scones per sheet to give them plenty of room. Bake for 10-15 minutes until lightly browned.

Especially tasty with a cup of tea :)

thanks for the recipe! I'll try those- still have a huge bag of poppyseeds that expires in a month.

I tried this recipe and it was too dry so I added a half of a cup of milk and they were OK.
